Who says Halloween treats have to come in a candy wrapper? These pumpkin & ham gnocchi are our favorite kind of kitchen magic. The pumpkin does double duty, blending into both the gnocchi dough and a silky, creamy sauce. It's a fun, hands-on recipe for the whole family, and a lovely way to taste the season. Here's how to make it:
Ingredients:
- 1 small pumpkin
- 2 tbsp heavy cream
- A drizzle of walnut oil
- 50 g (½ cup) grated Parmesan
- 1 egg
- 200 g (about 1⅔ cups) flour
- A few sprigs of rosemary
- 2 slices of ham
How to make it:
- Peel, seed, and dice the pumpkin. Steam it in your Babycook on water level 3, then blend until smooth.
- Set aside ⅔ of the purée for the gnocchi. Blend the remaining ⅓ with the cream and walnut oil to make the sauce.
- For the gnocchi, mix the remaining purée with the parmesan and egg. Gradually add the flour and knead until you have a smooth dough.
- Roll into 5–6 small balls. Press little grooves into each one with a toothpick to shape them like pumpkins, then tuck in a small rosemary sprig for the stem.
- Brown the gnocchi in a skillet, then add about ¾ cup of water. Cover and cook for around 10 minutes.
- Serve with the sauce and enjoy with your little monsters! 👻
